Indonesia’s unique Giling Basah (wet-hulled) process gives its coffee a deeply divisive taste. Unlike other methods, coffee beans are only partially dried before being hulled, exposing the green beans, which are then dried again. This results in lower acidity, a fuller body, and instantly recognizable flavors like earth, spice, and tobacco. While some see this as a defect, the market has embraced these flavors as characteristic of Indonesian coffee, sparking ongoing debate about their desirability.

Founded in 2011, the Mandiri Kopi Mill has grown to 1,400 members, focusing on quality, sustainability, and ethical farming. They support farmers with training, organic fertilizer use, and fair pricing while ensuring traceability and a reliable supply chain.
